You don't need to go to a luau to eat delicious Hawaiian Haupia. If you don't know what haupia is, it's comparable to a Hawaiian Coconut Jello! It's delicious or as we say in Hawaii, "Ono!" The kids are ready to teach you how to make homemade haupia! It's easy and you really only need 4 ingredients!

You will need

1 can of coconut milk, 5 Tbl sugar, 3/4 c water, and 5 Tbl cornstarch.

Mix the water and cornstarch well as a slurry in a bowl and set that aside. Mix the sugar and coconut milk together and bring it to a boil. When it's boiling add the cornstarch mix and stir it up until it starts to get thick bringing the heat down low. The key to this recipe is getting it thick for the setup. If it doesn't get thick and sticky it won't set in the refrigerator. Pour this mixture into a greased pan and set in the refrigerator for 4-6 hours until it gets hard like jello. I just leave it over night. When it's set, cut it into squares and enjoy. If it doesn't set you still have delicious haupia pudding and that goes good in pies too! Enjoy!
